Chef Dalton, who cooked at acclaimed restaurants like Mercantile Dining & Provision and Le Bilboquet, loves tradition and invention at the same time. His wontons, made with velvety boudin noir sausages and scallion sauce, are a triumph of east-meets-west cookery. The marble bar and European exit signs all add to the experience, making for a night out that is truly distinctive.
