Opened in 2019, this Michelin-recommended Navy Yard eatery was on Washington Post critic Tom Sietsema’s “7 Favorite Restaurants” List just this past year and on the Post’s “Best DC Restaurants” List the year before. Chef/Owner Reid Shilling previously cooked at Michelin-Starred Dabney. Here, working with local fisheries and partner farms at a restaurant of his own that is named for his family’s Baltimore-based business, which was widely known for its quality products, he is exploring seasonal ingredients from the Chesapeake region. Diners delight in starters like housemade spicy lamb sausage, country ham biscuits with pepper jelly, and deviled eggs and main courses like Maryland crab cakes with ramp tartar, buttermilk-fried Amish chicken with hot honey, hoe cakes, and braised greens, and wood-fired vegetables with fermented chili aioli. With its commanding bar, gleaming copper kitchen, and commodious navy-blue banquettes, Shilling Canning Company is a place that we look forward to moving into for the evening.
