A fixture on the Dallas restaurant scene since 2018, this Design District eatery has maintained its standards, winning places on such current Lists as Southern Living’s “32 Best Dallas Restaurants” and Eater’s “15 Essential DFW Italian Restaurants.” Chef J. Chastain, a veteran of Stephan Pyles and the Rosewood Mansion on Turtle Creek, was the opening executive chef of The Charles, putting into play the culinary insights he gained during visits to Florence. Within The Charles’ sleek and stylish environs, he is offering up dishes like fig & burrata salad with pistachios and prosciutto, Spanish mackeral crudo, wood-fired oysters and charred octopus, superb pasta dishes like blue crab bucatini and lemon ricotta gnudi with honey, crispy sage, and hazelnuts, and mains like chicken diavolo and grilled pork secreto. “The kitchen shows reverence for the cuisine,” says Texas Monthly, “adding creative flourishes, like Texan and Latin accents, to regional Italian dishes,” while Dallas Observer calls The Charles “something special.”
