Bûcheron
Day 2: 5-Course Nouveau French Tasting Series
Just celebrating its one-year anniversary, this French-American eatery (recently named a 2025 James Beard Semi-Finalist for "Best New Restaurant") was also the 2024 winner of Star Tribune’s “Restaurant of the Year” Award. Bûcheron, which translates to ‘lumberjack’ in French, is helmed by Chef/Co-Owner Adam Ritter, who grew up on a small family farm in St. Wendel, Minnesota. Chef Ritter hit the big time quickly after graduating from the California School of Culinary Arts, joining the opening team of L’atelier de Joel Robuchon in Las Vegas and then moving to Joel Robuchon at the Mansion, helping to secure its 3-Michelin-Star rating in 2008. After stints in California, Singapore, and Chicago, he returned to Minnesota, becoming Chef de Cuisine at Demi, a finalist for that same James Beard "Best New Restaurant" Award. At Bûcheron, he is turning out amazing dishes like bone marrow with whitefish glaze, delicata squash, and cauliflower, venison tartare with poached egg yolk, spruce tips, and rye chips, foie gras terrine with raspberry jam and amaretto, Berkshire pork chop with cashew purée and brussels sprouts, and luscious dessert like sticky toffee cake and “cookies and cream” milk sorbet. “South Minneapolis’ newest hot spot is ultra next-level…white-hot,” raves MplsSt Paul, so naturally we are super-excited to visit here!
