Day 1: 5-Course Revisiting Uruguayan Roots Tasting Series

Opened last October, this Adams Morgan eatery merges South American and European culinary traditions, helping it launch right onto Washington Post’s "26 Best New DC Restaurants" List of 2023 and this year’s Eater’s List of “38 Essential DC Restaurants.” Chef Juan Olivera is offering a menu that shows the influences of Spanish, Italian, French, and Portuguese cooking, such as one might find in the bar culture of Montevideo (in the chef’s home country of Uruguay) and Buenos Aires. Named for the South American flowering tree blossom that is the national flower of Uruguay, Ciebo celebrates the tradition of asado cuisine, or meats grilled over an open fire. Here, you will find dishes like lamb belly with tomato yogurt and confit potato, chorizo dumplings, rice pudding with gulf shrimp, and so much more, including luscious desserts like chocolate cake with dulce de leche and cheese mousse with quince. Washington Post critic Tom Sietsema said, “After just my maiden meal, I knew the neighborhood had a hit on its hands.” We’re primed to discover Ciebo and hope you will join us there!

Chef/Owner

An Uruguay native, Chef Juan Olivera (formerly of Lupo Verde, Barcelona Wine Bar, and Napoli Pasta Bar) opened Ceibo with his brother Manuel Olivera (formerly of El Secreto de Rosita and Del Mar). In his spare time, he operates his own consulting firm, which has helped design several concepts across the DMV.

Yes. All attendees must be 21+ to gain entry.
Does this restaurant allow BYOB?
No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.
What is the event ticket cancellation/refund policy?
Cancellation requests made within 10 business days of an event are not refundable or transferrable to future events. Cancellation requests made prior to 10 business days will receive a full refund.
What must I bring to the event?

Yep! For this event, guest tickets are $95 + tax & tip, and you can bring up to 3 guests. Please note, guests are not allowed to attend unaccompanied by a member.
