Chivos

5-Course Contemporary Cocina Tasting Event

Just a year old, this Heights eatery has already vaulted onto Thrillist's 2022 "Best Mexican Restaurants in the U.S." list and Texas Monthly's 2022 "Best New Restaurants" list. Chef Thomas Bille, formerly of the short-lived but buzzy Belly of the Beast, created Chivos' menu based on his upbringing as a first-generation Mexica-American. Together with Executive Chef Fernanda Alamilla (who was born and raised in Tabasco, Mexico) Chef Bille is turning out exceptional dishes like pozole dumplings, chicken wings with Vietnamese lemongrass glaze and peanuts, pork shank with tejocote-puya pepper glaze and creamy polenta, duck breast with fig mole, and Mexican street corn. (Not to mention incredible desserts like strawberries and cream tres leches cake and calabaza, which is warm candied pumpkin, pumpkin spice syrup, vanilla ice cream, orange blossom, and lemongrass.) Chivos, by the way, is Spanish for 'goat.' The name plays on the acronym G.O.A.T. (Greatest of All Time), which personifies the ethos and spirit behind this restaurant. We're very much looking forward to our visit. Hope to see you there!
