ChoLon

5-Course Tribute to the Far East Tasting Event

A staunch survivor of today’s tumultuous restaurant scene (having opened in 2010), this Asian fusion eatery debuted as a James Beard Finalist for “Best New Restaurant in America” and has appeared on such Best Of Lists over the years as 5280’s “Denver’s Best Restaurants” and Thrillist’s “Best Dumplings in Denver.” ChoLon translates to “big market” in Vietnamese. It also includes the first name of Chef/Owner Lon Symensma, a graduate of the Culinary Institute of America whose previous credits include Two-Michelin-Starred Roger Vergé’s Moulin Mougin and Jacques Chibois’ La Bastide Saint Antoine, as well as Award-Winning Buddakan in NYC. Diners enjoy such fare here as kaya toast with coconut jam and egg cloud, cornbread takoyaki with octopus, kimchi fried rice, braised pork vindaloo, miso-glazed salmon, and assorted dumplings and bao buns. Leave room too for great desserts like smoked chocolate ginger s’mores and 5-spiced doughnuts with Vietnamese coffee ice cream. ChoLon’s environment is also stunning, with its high ceilings, giant windows, and marble floors. “There’s a yin-and-yang energy to Symensma’s food, a wonderful tension between the earthy and the ethereal,” raves CN Traveler, so we are super excited to spend an evening here!
