Day 1: 5-Course Progressive Mexican Tasting Series
Opened just about a year ago, this newly Michelin-Starred Chinatown eatery that celebrates the cuisine of the northern region of Mexico hopped right onto Bon Appétit's 2024 List of “Best New Restaurants” and Infatuation’s List of “Best New Spots of 2024.” Chef/Owner Fidel Caballero worked at Martín Berasategui’s 3-Michelin-Starred restaurant in Spain and was the sous chef at Michelin-starred Contra on the Lower East Side. The concept for Corima – which translates to “circle of sharing”—draws from what Chef Caballero describes as “progressive Mexican,” but with distinct influences from French, Chinese, and especially Japanese cuisines. Here, diners feast on dishes such as tuna mille-feuille with husk cherry salsa and chicharron furikake, skate tamal with potato and Iberico foam, duck taquiza presented with banchan-style pickled and fermented items, and fabulous sourdough tortillas that everyone is talking about. Make sure to leave room for inventive desserts like mochi churros, as well as sweet potato and mandarin raspado. Hailing from northern Mexico, Chef Fidel Caballero has spent the last 15 years cooking around the world, including working at Martín Berasategui’s 3-Michelin-Starred restaurant in Spain. The former sous chef at Michelin-Starred Contra, he hosted pop-ups under the name Corima before establishing the project as a brick-and-mortar.

- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to [email protected].
