Day 3: 5-Course PNW-Infused Pan-Mexican Tasting Series
Opened in 2022, this Pearl District eatery has appeared on such 2024 Best Of Lists as Oregonian’s “40 Best Restaurants in Portland” and Eater’s “Best Oaxacan Food in Portland.” De Noche is the latest gift to the Rose City from República & Co. Hospitality Group, whose República and Lilia are two of Portland’s most beloved restaurants. (BTW, Bon Appétit named República one of the “Top New Restaurants in America” while Esquire similarly honored Lilia.) At De Noche, Executive Chef Dani Morales is turning out dishes that glorify the time-honored tradition of Oaxacan cooking, like moles, aguachiles, and such beautifully complex creations as masita, a kind of maize risotto with goat cheese, watercress, and sunchokes, and pipian verde, which is beef with pistachio, greens, and pepper. “Chef Dani Morales serves startlingly good food,” raves PDX Monthly. “She offers exacting, textbook perfect renditions of classic dishes and playful, thought-provoking inversions of those same ideas, often in the same sequence of bites.” We look forward to chatting with Chef Morales and finding out much more about Oaxacan cuisine, surely among the world’s great cuisines.
