Hunky Dory
6-Course Sustainable American Dinner Event
Spanking new, as of January 2019, Hunky Dory in Crown Heights is the brainchild of Claire Sprouse, an acclaimed San Francisco bartender who takes no shortcuts with her libations. (She makes her own orgeat, for instance). A philosophy of sustainability and inventiveness marks the food as well, which are creations of Chef Kirstyn Bower, who came to Brooklyn by way of Dallas, where she was named an Eater Young Gun nominee. Here, she is turning out food that is designed to please palates: dishes like roasted cod, pork schnitzel, braised short ribs, and what she calls “Green Eggs and Ham” (rice and beans, green chili sauce, braised ham, and soft-boiled eggs). Edible Brooklyn says, “Between Brewer’s adept kitchen skills, Sprouse’s prowess behind the bar, and the overarching commitment to sustainability and community, Hunky Dory is quickly becoming a unique neighborhood asset.” We will be taking over Hunky Dory for this event and will be hearing from Sprouse and Brewer about where their ideas come from and what the challenges are of getting a restaurant up and running.
