Jansen
Day 2: 5-Course Avant-American Tasting Series
Opened in 2016, this Mount Airy/Chestnut Hill area eatery has maintained its lofty standards, winning the “Best Fine Dining” Award from Philadelphia Inquirer this year and appearing on Eater’s “Essential 38 Restaurants” of 2024. Chef/Owner David Jansen has food genes in his DNA. His grandmother was a pastry chef and his grandfather was a butcher. Carrying on the family tradition, he served as Chef de Cuisine for over a decade at Fountain, the illustrious French restaurant inside the Four Seasons Hotel. Now, at Jansen, he continues to turn out superb food, with dishes like oysters Rockefeller, steak frites carpaccio, New Zealand lamb chops with stuffed polenta cake and bacon braised kale, white wine poached Norwegian salmon with endive salad and roasted fennel, and sumptuous desserts like chocolate “love” cake (brownie with chocolate mousse and caramel Bavarian) and pickled apple tart with vanilla bean anglaise. Philadelphia Magazine says, “[Jansen’s] restaurant is an ode to the style, the design, and the dishes that made him a chef, and he cooks them with zero irony. Which, today, might be the most revolutionary thing a chef can do.”
