5-Course Sustainably Seasonal Tasting Event
Opened just this past October in the downtown Populus Hotel, this eatery that extols nature-based cuisine was named to 5280’s List of “12 Buzziest in Denver” and OpenTable’s List of “24 Best Organic Restaurants in Denver.” Named for Colorado’s early-blooming wildflower, Pasque offers a refined cuisine developed by Executive Chef Ian Wortham, late of the acclaimed Frasca Food and Wine in Boulder and Denver’s iconic Tavernetta. Chef Wortham’s menu explores the riches of each season, with fresh plant-based ingredients complemented by sustainably sourced proteins from both land and sea. Here, in a calming setting that is meant to evoke a forest floor, diners feast on starters like lobster toast, roasted carrots with smoked paprika, and scallop crudo, mains like roasted duck with savoy cabbage, camembert, and pickled mustard seeds and black bass with trout roe and smoked sabayon, and desserts like chocolate budino and salted toffee cake. This is a genuinely exciting new restaurant for the Mile High City, and we are delighted to be in on the “ground floor,” as it were. We hope to see you there!
About the Host:

Ian Wortham
Executive Chef
Originally from New Jersey, Chef Ian Wortham cooked for several restaurants in New York State’s Finger Lakes region before graduating from Johnson & Wales University's esteemed culinary school. After moving to Colorado in 2011, he honed his craft at multiple notable establishments, including Michelin-Starred Frasca Food and Wine and iconic Tavernetta. He now serves as Executive Chef for Pasque and Stellar Jay.

- No. This restaurant is a non-BYO establishment. Outside alcohol will not be permitted at this event.

- What is the event ticket cancellation/refund policy?
- Restaurants purchase the food for our events 14 days before the event date, at which point we are on the hook for the cost of your ticket. As such, we are not able to offer refunds (or credits towards future events) for any cancellation requests submitted within 14 days of the event date. We will, however, issue full refunds for all cancellation requests submitted at least 14 days before the event date. All cancellation requests must be submitted via email to support@tastingcollective.com.
- What dietary restrictions/food allergies can be accommodated at this event?
- Due to the large-format nature of our events, restaurants are not able to accommodate all dietary restrictions/food allergies or make any menu adjustments based on food preferences (e.g distaste for specific ingredients/flavor profiles). At this event, Chef will be offering substitutions exclusively for the following restrictions/allergies: Vegetarian, Pescatarian, Gluten, Mushrooms, Alliums, Fish, and Dairy. If you have any of these restrictions/allergies, please make sure to note this info in your profile (in the “Event Preferences” section) before or right after purchasing your tickets so that Chef can prepare accordingly.
- Is there any important parking-related info I need to be aware of?
- Yes! This restaurant is located within a hotel and, as such, guests who wish to park on-site will need to adhere to the hotel’s valet-only parking policy at their standard rate of $12 plus tax per car (3 hours only). Self-parking will not be permitted on-site, though there are nearby parking lots.
