Potager
DAY 2: 6-Course Farm-to-Fork Dinner Series
Potager, Denver’s original farm-to-table restaurant, has been a mainstay of the city’s dining scene since it opened in 1997. This April, however, it was reborn under the ownership of Chef Paul Warthen and his wife Eileen, who have miles of experience under their belts. Chef Warthen trained in top eateries in L.A., Philadelphia, and New York. (Did we mention that he also ran an 800-acre farm and restaurant in the Shenandoah Valley?). Eileen is a certified sommelier. They joined Potager’s team in 2017, and are now preserving all that is well-loved about it. Potager, which means kitchen garden, serves food that is meant to comfort and be enjoyed. Here, you might find dishes like lavender-scented lamb or ‘zucchini bread’ falafel with sweet corn buttermilk sauce and jalapeno honey or pan-roasted pork with collard greens, aged cheddar polenta, and peaches. “It’s a restaurant that we love a lot,” says The Infatuation—and so will you. We will be taking over Potager for the evening, and Chef Warthen will be in and out of the kitchen to address your questions and talk about his food favorites.
About the Host:
Paul Warthen
Executive Chef & Co-Owner
Chef Warthen grew up on a 500-acre dairy farm in Maryland, fascinated by food's capacity to bring people together. He has honed his craft under Joaquim Splichal in LA, Marc Vetri and Roy Yamaguchi in Philadelphia, and spent 10 years in the New York restaurant scene before finally settling at Potager. He and his wife Eileen purchased the Denver institution in April 2019.
